Can I customise my Jira Dashboard to show both Kanban boards and Scrum boards for different projects, if so is there documentation?

Dashboards show gadgets or widgets, not boards.  But there are gadgets that can show you information that boards would show you too.  Each gadget is independent of the others, so yes, you can use different data selections such as different projects on each one (or selections that include several projects)
