I try to change the start and end date on a ticket and it switch automatically on an old one (07.05.2021).
This scenario arrives only for a new collaborator who has started recently in our company and for a specific projet (INT).

Can you check if your project is linked with any BigPicture program and the date is syncing from BP to Jira?

Yes the project is linked with a BigPicture programm, but I'm not sure it is syncing from BP.
What's BP? Where I can check this?

BP is just shortform BigPicture.
Under BP >>app configuration>>Tasks> task configuration.. You will see the fields.
If you don't want to sync these field then you can customize your sync setting

It was the problem indeed, I removed the syncing from "Start date field" & "End date field" and it works properly actually!

It was great, but unfortunately, now the tasks is not adjusted automatically in the planning of the resources.
We target the problem, but not synchronised the field is not the solution, because when we created a task we have to stretch the task in the planning manually, it is not placed automatically with the start and end date set in the ticket.
Do you have an idea why this problem affect only one employee? we do not have this problem with others employees.
