Cannot change the date format

I am trying to change the date format of a custom field date.

I'm getting an error when I try to edit it and change format.

Yes, and...to Nicolas's answer:

In an automation rule, using the date / time formatting produces a text value, such as for sending a message or email.  It does not impact the field itself (unless the field was plain text).

Is there a bug in reformatting date fields or is it a matter of changing the default format?  And if the default format can be changed, is it a change for all projects in Atlassian or can it be applied to a single project?
