I've noticed that i can only select/add a value to a Component field at the point of ticket creation. It seems impossible to add this after the ticket's creation or to edit the value? Is this how it is supposed to work?

The Components field can be edited at anytime if the field has been added to the Edit Screen and the field has not been hidden.
If you are an Admin of the instance, you can always try the field helper on an issue screen to investigate why the field is not appearing / editable on the issue screen.
