Convert user story to a defect

Does Jira Enterprise have the ability to convert a user story to a defect?

Are you talking about changing issue type?

If yes, and workflows for this issue types differ, then you have to do "Move issue".

Select there new issue type, and the same project. This will do the trick

if you have administrator permission and if you have both issue type in your project, you can move from one issue to another as long as you can map the status and mandatory fields etc
