Currently, our project is configured to link a defect to an epic.
A team would like to link a defect to a user story and not an epic.
Is there any reason why one shouldn't link a defect to at user story?
Is it common practice to link a defect to an epic?

Are you talking about generic issue linking, or about making Stories and Defects "children" of Epics?
If you are talking about generic issue linking, then it won't make a difference functionally if you link the Defect to the Story instead of the Epic.
If you are talking about the parent/child relationship between Epics and their child issues (stories and defects), that sort of parent/child relationship can't be created between issue types that are at the same level as Story and Defect are. If you stop making the Defect a "child" of the Epic, it won't be counted towards the Epic's completion metrics. If you want to link the Defect to the Story, you can do that only through generic issue linking. The Defect will not be considered a "child" of the Story.
