Does anyone know why I do not have the edit option to select a color for the category?

The edit option doesn't show up for me to select a color to affiliate with "test". Is there a specific project I need to use or a feature I need to turn on? We use Jira Cloud - Premium. Thank you for any advice.  I would like to have a field called "Quick Status" and be able to affiliate a color with words (On track, At Risk, Behind) colors being green, yellow, red.

To the best of knowledge, Jira doesn't support colorizing fields at all. However, there is a solution offered in this post that uses colored emojis to give some color indication to your field:
