Due Date must be selected as future date

How to use Script Runner for this?

I have applied the script validator during Issue Creation, but the user can update the Due Date using Issue Edit functionality so how to user Scripts for this?

Do not keep the due date field in the edit screen. Have a transition, for example 'Update due date' in the workflow just to update this due date field. Apply your script validator in the transition.

Keep the 'due date' just in the view screen (may be create screen also...)
