I was able to create a "Feature" work item type, however I would like for it to live between Epic and Story within the hierarchy. Is there a way to accomplish this? Also, can we customize which work item types we see in our backlog? Ideally we would want to see stories.

Welcome to the community.
No this hierarchy can't be changed, there can't be a level between Epic and Story.
Yes, the backlog is part of the board and this is based on a filter, so if you adjust the filter, this can be done.
This all in relation to company managed projects.

You culd rename Epic to Feature and then rename the Feature to Epic.
The only point is that the Epic work items type features will be then on the feature level.
There are no options to create another work item like this or transfer these feature to another work item. Only this levle can have the parent child feature.
