We're using Jira Cloud, and the new issue view looks to have messed with either which renderer fields are using - such that it doesn't reflect changes to the renderer selected.
This isn't a custom field - which most questions seem to be asked on - but the Description field.
I've selected both field types in the field schema that my project is using, and they don't seem to apply. There doesn't seem to be any documentation beyond the wiki style, and that doesn't work - in my case I'm trying to add a table and some basic emojis (the check/tick and the cross) in it.
Issues that already had a table rendered in it from a few weeks ago still seem to have that rendered ok, but new issues won't display tables using the wiki style.

To be honest I am incredulous that this is a bug that's live in production, and that it's currently marked as "low".
To summarise - Atlassian rolled out a new architecture and UI and haven't tested that the renderer used in the issue description editor - very much a core part of using Jira - is functional with approximately the same level of markup/editing abilities as before?

The new issue view is not fully ready yet, that's why there is the option to turn the new view off.
The dev team will check all the bugs before rollout the final version.
For now, please disable the new view.
