×Jira used to show all labels in filters list view. After last update only one is shown and the rest is supposed to be expanded manually which is annoying considering that labels are widely used in our workflow.
Is it possible to make them all visible in new interface or rollback somehow to old one (filters specifically)?

Where is this feature specifically? Is it on a certain type of board? Or within a certain type of Project?

Filters -> Any saved filter
Basically it's 'Issue Search' which is used as kinda board cause boards itself are not informative for QA purposes in our workflow.
Finally I've found how to switch back to old Issue Search, that's ok as far it's available.

It might be worth adding your feedback to that article, which does state...
We're excited to announce that we're moving all Jira users to the new issue search experience by the end of March 2024.
^ However, this doesn't seem to have removed the option to switch to the previous issue search (yet).
There's also a feature request to include the ability to see multiple labels in the new search view - check out: JSWCLOUD-26584
