I renamed the team owner field drop down options from "Prioritisation Queue" to Product how can I do bulk change of old tickets that still have the Team owner and Team assisting fields as "Prioritisation Queue" to the new changed name called "Product"

I'm not sure if I follow the logic of which fields you have, but you can always search for multiple issues and use Bulk Change.

Don't forget to "Disable notifications for bulk operations". Email spam can be very annoying.
