I am trying to show/hide fields on issue creation based on the selected value in a dropdown whose values come from Insight.

Are you using Jira Server or Jira Cloud? I see you have Jira Cloud tagged, Behaviors is not supported yet for ScriptRunner in Jira Cloud.
