Is it possible to set a JIRA default field to Read Only?

I don't wish users to set for example the Start Date, End Date and Assignee.

Hi @Marco Scicluna 

Sadly no. There are some workarounds but Jira doesn't have field permissions.

There are a couple of plugins that could help:
