I am experimenting with JIRA Cloud (free) to see if JIRA cloud may be the right solution for our organization. However, unlike JIRA Server there appear to be no default screens, issues (other than epics), or linked workflows set up. It appears I have to create whatever projects / programs I need from scratch.
Is this correct or is there something I'm missing or a setting I need to activate?

That is not true. How have you come to that conclusion?
Jira does not necessarily store defaults that you can view before you create the project. However, based on the project template you select when creating a project, Jira will automatically apply a default set of issues, permissions, screens, workflows, etc.
Hello Trudy, I came to that conclusion because it appears "there is something I'm missing" as I stated in the original question. Just want to clarify as I did not intend to state something "That is not true".
When working on JIRA Server I began after an initial project was created.
