JIRA Management Best Practices

I would like to know what is recommended to have an "Issue Type Scheme", "Workflow Scheme", "Screen Scheme" and "Field Configuration Scheme" for each project or if it is better to use the same schemes for multiple projects in JIRA. Is there any performance impact in one or other approach?

It very much depends on what you want from JIRA and how you're using it.  I can't recommend anything (other than "don't hide fields with field configurations") without knowing, size, scope, intention and so-on
