With every business project that is created a script is run for that project to create a Confluence Space and a Jira Software Kanban Project. 90% of business projects are run off of a card-wall (kanban board/super todo list). 9% are run in a Kanban Framework and 1% are run in full scrum.
My question is: Is it better to start with a Jira Kanban project as we are now and make the changes needed to run in scrum, or does going the other direction solve some pit-falls?

No, a project is a scrum or kanban based on its workflow or schemes. As when you just add a board, the same scrum project can be a kanban (not changed to kanban).
You may start with Scrum with a Kanban board and it would be just a project depicting the board it has.
