I have been trying to add a custom-field to the Issue screen and can't really figure where the screens are. When selecting the Issue screen I see the following:
The only ones that seem to matter are the project related screens. When I just select default, Resolve Issue Screen and Workflow Screen I can't actually see the customfield.
Is this normal? Maybe I just don't know how to get to these screen?
When you create a project you can select "Create with shared configuration" at the bottom of the screen. This allow you to use all schemes of one project to be used in the newly created project

You can go to project settings of your project and select screen. It will display screen schemas of your project against each issue type. you can expand screen schema of your issue type. it will show screens for create ,edit and view. You can select the required screen and add field to that screen.
If you want to add field to any transition screen. you can search for screen by press . and type screens. It will list all the screens. so you can select your screen and add field to that screen.
NOTE : Make sure the field is associated to you project and issue type other wise , it will not display even though you added on the screen.

You can find all the list of screens - Choose settings > Issues - Screens
But you cannot edit project default screens, you can use shared configurations instead
