Adding an approval step to projects using Approval Path

I want to use Approval Path, and I believe I'm supposed to click the "Definition" tab; however, I do not see a "Definition" tab on top and I don't know how or where to add that to my projects.

Welcome to the community. I hope you're doing well.

If you want to add the approval JSM native feature, then you can add approval process in the transitions.
Here is some instructions on how to do it

Approve work items using workflow steps in Jira Cloud | Jira and Jira Service Management | Atlassian Support

If you go to your workflow, and select the status that'll need the approval, you'll have this option

Then when you click on Include approval step, you'll see the following screen.

And finally will go to the screen where you select what transition to use when it's approved or when it's declined
