we need to create a Service Desk for our development project.
Actually we have an IT Development Software project and we want to integrate with Jira Service Desk.
Which is the best way to do it?
We have to change the type from "Software" to "Service desk"?
If do it what happens in software project?

No, you don't need and should not change the project type. If you change your current SW project to SD, you will lose access to boards, for example, because JSD doesn't have this feature.
