Hi @Erin Moore ,
Welcome to Community !
Please follow below steps.
1. Create Field Configuration called Test and add the required description for Description field.
2. Create New Scheme Field Configuration scheme called Demo Scheme. Once you create new scheme it contains Default field Configuration for all issue types. To this Demo Scheme associate an issue type with Test field configuration which us created in step 1.
3. Navigate to project settings > Fields > Use Different scheme
3. Select Newly created Demo Scheme and associate.
Thanks,
Avinash

Thanks again @Avinash Bhagawati {Appfire}, but this only partially solved my issue as it results in a 1 Field Configuration Scheme to 1 Project. But it *did* prompt me to resolve the problem: I needed to create a new Main Field Configuration Scheme and link all the Field Configurations, including the Default Field Configuration, with properly associated issue types to it. Voila!!!
Thanks again!

The "Description" field is unique. Yes, it's likely the only one you can't hide or edit.
