Each issue on the planning board shows only the ID, summary, and estimate. Is there any way to show additional issue fields? Like the issue's component? the issue's status? etc...?

If you click it, the issue details come up in a new column on the right of the screen. That's tabbed, so you can find much of what you're looking for there. That view is currently not very configurable, but there is an issue associated with that you can vote on: https://jira.atlassian.com/browse/GHS-3474
