Different approvals based on custom field (risk based approvals)?

I've created a custom field called "Risk of Change". That values for this field are high, medium, and low. I'd like to create a different approval workflow based on the value the user selects for this field. Low risk changes wouldn't require approval, medium would require change manager approval, and high would require CAB approval. Is this possible? How do I do this?

You probably already figured this out, but I'd do this by using the automation plugin to advance it automatically past approval based on certain circumstances, or you could use the conditions on workflow transitions to conditionally show/hide the options based on the severity.
