I am looking for a way to get metrics like the following:
Bug tasks created per sprint
Avg bug subtasks per story
Time between create and close time on a bug.
Time between ‘ready’ and closed (as done) on stories.
Defects found in production per release.
Defects found by clients per release.
Epic burndown charts
In-progress items per epic (shows what the team is working on)
Items that have been in more than 1 sprint.
Most of these types of data points are drawn from transitions, and i know they can be accessed via some BI tool add-ins... but Marketplace requires i purchase licenses for my entire company when only ~10% of these users will need access. I can't justify paying 10x more than my need.
Could someone help with options?

For time and date related metrics, you can use Timepiece - Time in Status for Jira. It is available for Jira Cloud, Server and Data Center.
Using Time in Status you can report how much time each issue spent on each status, each assignee or even each user group. (useful for calculating lead/cycle times and identifying bottlenecks in your process). You can also see the number of times each status or transition was used (very useful for inspecting things like reopen counts). You can also list the status entry/exit dates.
You can produce reports based on the default 24/7 calendar or define your own business calendars with custom workdays and working hours.
Also add system or custom fields as columns to your report and customize the view format of durations.
All data can be exported as XLS, XLSX, CSV.

unfortunately, w/ that level of detailed stats you will need an addon. You mentioned EasyBI. You might also look at Time in Status. I haven't used but I have seen where many others do and it is a wee-bit cheaper.
A couple of OOTB thoughts that would need a fair amount of work I expect:
Some of what you want I think is there using Dashboard gadgets but not the time in status part.
