There are some default Jira labels (FEATURE, RETENTION,UX,VALUE ETC.). How does Jira propose to group tasks according to that labels? What all these labels are stand for?

Any user can create labels to add keywords to issues. You can use labels to search and report on issues flexibly.
If the default labels aren't useful to your company, you can make your own. The danger here is that the project can end up with numerous variations, e.g., documented vs Documentation_Done. Users should look for existing labels before creating a new one.
Don't use labels where another feature exists. For example, don't use labels to assign an issue to an epic.
I've used the Colored Label Manager add-on in the past, which I think is an improvement if you want to spend the money.
