×I see a field where the amount of time spent can be manually entered. Is there a start/stop option that'll track the amount of time spent? Bonus if it would create a date entry along with the start/time.

there is not such an option in Jira, there are couple of plugins which provide this though. You can try for example Toggl Integration for Jira or Clockwork Automated Timesheets Free.
