Is there an upgrade chart anywhere telling me what version of JIRA I can safely upgrade to?
Something like
Version | Max Upgrade
8.8.1 | n/a
8.8.0 | 8.8.1

7.11.0 | ???
I am currently running Jira 7.11.0. I want to uprade to the latest version however I'm wary of the fact I may need to do multiple updates to get there. I'm sure I don't need to upgrade through every single version number, which would be incredibly tedious, but I cannot find which versions I can jump through.

In your case, you can upgrade from version 7.11 to the latest version of Jira, but you might need to consider looking on supported platforms document first, which is on this link https://confluence.atlassian.com/adminjiraserver/supported-platforms-938846830.html. Please make sure that your environment has all the requirements to perform the upgrades. Stay alert on databases for example, on Jira 7.11 and 8.10 the compatible databases are PostgreSQL 9.6, so if you have PostgreSQL 9.3, which is compatible with Jira 7.11 but not on 8.10, you need to upgrade your PostgreSQL database first. There are other examples you will find on the document that I mentioned later, such Java, so to perform a safely upgrade, please pay attention to these details.
