I have to install the Server (on-prem) edition of both tools: JIRA Core and JIRA Software.
Would you recommend to place them on the same virtual machine (Windows or Linux)? Or separate to 2 diffrent machines?

Who better to answer that than yourself? The list of pros an cons are very long, but here is a few..
Why dont put both core and software inside the same JIRA?
1 server: Less server setup. Database, proxy servers, certificates, backup, etc.
2 servers: Ability to take down just one server for maintenance. More server setup..
Agreed - the whole point of JIRA Software is that it adds to a JIRA Core system, not runs another separate copy alongside it.
