We work with multiple client and internal projects at a time and the team are keen to move over to sprints.
This makes sense to me but I need to be add issues/tasks from multiple scrum boards into 1 active sprint for a 2 week period - or we are not eliminating the problem of having to track work across multiple boards. \
I cannot find any instruction on how to do this. Is it possible? If so, how?

Yes, you can feed a scrum board from multiple projects. You will first ant to create a filter that pulls in the isses from all the projects that you want to work on through the board, then create the new board with the "use existing saved filter" option.
Note that you will need to map all the statuses to the board (if the projects use different workflows) through the board settings, and any issue changed in the board will also change in the project and vice versa.

you could create a scrum-of-scrums board. That is create a new scrum board that is a culmination of the other boards and use it for sprint management.
