I have a doubt on how to assign the components. What is a component? Do we assign the components to the epics or story? If we assign it to an epic, can we link multiple components to one epic?

Components are like Labels or Tags. But they set values that can be added to a Project by a Project Administrator or Jira Administrator. They are helpful for organizing or categorizing your work. They are especially helpful with reporting.

The field "Components" is always a multiselect.
You can think of it as a way to order issues horizontal compared to vertical (Epic > Task > Subtask).
Every component has a lead and a default assignee, so you can use them to order issues to people automatically, otherwise it is just another way to group issues. So it really depends on what you're doing in your project and how many ways of "grouping" you need.
