I created a rule to have sub-tasks appear when an epic is created. I wanted to add Assignee and Due Date to each sub-task line item I create.
(I created a custom field of Due Date - different than the system's Due date - just to see if that was the issue - neither are appearing). Suggestions?
It used to be possible to configure this in Cloud prior to the UI update (the "new issue view") - it's still possible in Server/DC.
The setting is still there, it just doesn't function correctly - to see the setting, as a Jira Admin:
There is a feature request to reactivate this functionality - vote for/watch JRACLOUD-70206
In the meantime, there might be an App which can help with this function - such as Issue Matrix for Jira, or another App from the Marketplace

So I did find te Issue Matrix for Jira, which is really cool! I downloaded but now I do not know how to find it or implement it. I have googled but can't seem to figure it out! Can you walk me through it?

Is your question primarily that you cannot see the fields in the "issue in epic" and "subtasks" list when viewing the epic?
If so, that is not possible with out-of-the-box features of Jira Cloud. Here are a couple of suggestions to make the columns configurable for that view, which you may vote for/watch to see progress.

You can't create subtasks on Epics. Subtasks are a smaller part of a task. Tasks can he included under an Epic "umbrella", meaning can belong to an Epic. But Subtasks are not part of an Epic.
So on your rule you can create tasks on an Epic, but not Subtasks.

That actually isn't my question. I already created a sub-task when my epic is created - see image above. My question is - and I have done it before it a previous job, I just can't figure out how I did it - is to add a due date to the sub-task line item. For instance where it says in the first image above "Test Sub-Task list..." I want to also have the option to put a due date and an assignee for that sub-task.

@Sara Palmitessa you are indeed correct and I misread your question. But for the sake of it, you can't create a subtask on an Epic. You did it somehow else and I believe you, but subtasks belong to a parent which is standard issue type and not an Epic.
Now, concerning the Due date, on my instance I can find it without a problem, can you please check that:
