I am having a custom field value Expected Fix Date the date value for this field will be updating through out the issue transition, now i want to know how many times the field is updated, is it possible ,if so kindly help.

If you want this to be visible on the issue and usable within JQL clauses based on the number, you can create a custom field to the number type in the system.
Then create an automation that triggers on change of the field Expected Fix Date, and based on that have an action to edit the custom number field and update the field value by one.

I think a relatively simple solution would be an automation like this one, where you get a notification on Slack or an email when the field is updated.
But, this solution would potentially create a lot of 'noise' if this field is being updated frequently in different issues / projects. You could use, instead, something like a filter subscription or a CRON to send you the activity at the end of a week or something. Please can you clarify what you want to do with this information?

As am working in Jira cloud it can be a best option for me to write a filter to notice the number of updations which helps me to prepare the Metrix.
