From the parent task view - how can I edit the status or assignee of the subtasks, without opening each subtask individually. This was possible in the old issue view but I cannot see how to do this in the new view.
edit: as my question is specifically about the new issue view, please don't tell me how this is possible in the old issue view - I already know that.

You can still do that by clicking on the three dots next to the subtask.

Your screenshot shows the old issue view. I am trying to find out how to do this with the new issue view... the dots are no longer there

We are using cloud Jira too and as far as I know cloud Jira is always the latest version. That's why I though issue view should be the same. Can you check you Jira cloud version and attach a screenshot of how your issue view looks?

When I click the option to 'see the old view' - I am shown the old view, which is what you are seeing and what used to be the standard view. Recently, the new issue view has been rolled out.
If you don't see this at the top of your issue view, you are using the old view:
