×We have started to use Releases and Versions on our Software projects but would also like to use these features on our client Service Desks. does anyone know if this feature is available?

If you are considering using releases for a Service management project, I assume that you might have a need to connect releases from Service Management to releases from Jira Software. As it was mentioned before, out of the box, the release is coupled to the project so making cross-project releases will require extra software.
We have created a Release management application (DC Version) that can help to organize cross-project releases, synchronize them across multiple projects, define release workflow and transition rules, generate release notes, plus many other features that can simplify complex release management. Also, it will simplify release scope management, which is really needed in the scope of Jira Service Management

As long as your service desk project is company managed, yes - you can add versions there. Navigate to Project Settings > Versions and you can add versions. In team managed projects this is not an available feature.
Be aware that versions are specific to a single Jira project. So when you define versions in your Jira Project, you will need to define them again in your service project, even if they have the same name.
Also, on a final note, the Jira Service Management UI has a different navigation bar on the left hand side, that does not have a link to display the releases information. All you can do is populate the list of versions via project settings as I mentioned above and let your agents link issues to those versions when you add the fix version / affects version fields to your service project's screens.
So, in short: yes, you can use versions in a service project, but with limited capabilities.
