×If an issue is removed from a sprint by editing the sprint field, I assume JIRA puts it back in Backlog. Does it put it back at the rank it was previously? Or at top? At bottom?
And if issues are 'carried' at end of sprint (so not completed by time sprint is closed) same question, where do they go?

If you remove the sprint field (by editing the issue), the issue is moved to the top of the backlog.
If you have incomplete issues at the end of a sprint, Jira lets you decide where you want to move them: to the top of the backlog or to an open, future sprint that already was created on the board.
Thanks @Walter Buggenhout ! Thinking about it that makes perfect sense actually as the PO can then make priority decisions. And of course those issues should have been highly ranked to be in the sprint in the first place!
