I have issues that are canceled. The resolution is "Won't Do" but still showing in my open issues, why? Should I add a post-transition to "RESOLVED"?

An issue will stay open if the resolution field is not set. Setting a post function to update the field will fix your issue.

I'm having this issue too. It seems that Jira thinks "Won't Do" means "Will do later."

Setting the Resolution field to anything implies it is "resolved". However, "resolved" and "closed" are separate things. You aren't specifying how Jira is saying "Will do later".
Setting a Resolution shows in many JQL queries as if the issue is closed regardless of what the resolution is. The resolution could be "Fix This Now" and it will come across as resolved.
The final state the issue stays in often is "Closed" but it doesn't have to be named that. Often the final state will be set to issues are Read Only and maybe only a few folks can reopen an issue.
Last point, If you created your own state for the final state, you might consider setting that issue's properties to jira.issue.editable is "false" which makes it Read Only. You might also consider setting that "Status" to Category is "Done" (Admin screen, edit "Statuses", find the one you're using as a terminal status and "Edit" it by setting Category to "Done") which helps some reports show the issues are indeed finished.
