New workflow, pretty simple. To Do to Open To In Progress to Done
There is no transition that goes from To Do to Done
When I look at a Task, there is a "Done" button at top, in addition to Assign (transitions to Open). If I click it it changes the status to Open and Resolution to Done. How can I remove this button?
Don't know where it came from so just deleted the workflow and created a new one.
Have you changed the workflow scheme so your tasks are associated with your scheme and not the default one? The Assign button in your screenshot above is not from your workflow, that is the Assign function that comes by default from Jira. Workflow transitions are always to the right of the More button.
The easiest way to verify what workflow your issue is using is to click on View Workflow.

Hello @Joe Snyder and welcome to the community!
It looks like this is part of a simplified workflow, meaning all statuses can transition to all statuses.
If you want to remove that button only show after one status, you would have to modify your work flow and add a transition from in progress to done.
If you need steps on how to do this, let me know.

Don't think it's a simplified workflow; I set up the transitions to limit from To Do, either Assign or Blocked, no Done. Maybe there is a setting I'm missing?

That's definitely not a simplified workflow.
