I would like to update my SPRINT value to CURRENT SPRINT when my issue changes to a specific status.

It looks like I can do it via Post Function for Custom Field - but it doesn't actually work

That sounds like a broken process to me, as people would be bringing new stuff into a sprint by progression rather than planning.  Is there a good reason you don't want to do Scrum?

Don't even get me started!!  But I am fighting one fight at a time.   So back to the original question is there an EASY way to do this

There's not even a hard way to do this, because it's wrong.

You would need to write some code to do it.
