I recently updated our JIRA instance to 8.10.0 and I'm getting a warning message asking me to update our PostgreSQL 9.5 to a compatible version.
My question is, which PostgreSQL version would work with my JIRA version? and is there any documentation I could follow for doing this upgrade?

As per the documentation, PostgreSQL 9.6 & above is compatible.
It is recommended to go for PostgreSQL 11.4
It can work for 2 more years without DB upgrade.
Requirements of Database Engine & Version.
PostgreSQL 9.6
SQL Server 2016
Oracle 12cR2
MySQL 5.7
