we are still investigating if Jira Work Management is for us.
So far we have created a couple of test projects with some of the 23 provided templates.

However, it seems like there is no real difference between those templates. All of them utilize
list, boards, calendars, forms and timelines.
Is it solely a difference in what issue types and statuses are used? Or is there anything else that we are missing?

No, I think you are right...it is just the different issue types and workflow designs. Which of course, you can add to, modify to further enhance. But same stock standard UI for JWM, which echos how JSW is as well (same stock standard UI, with customisable fields, screens, issue types and workflows.
