Short question: Is it still not possible to use a kanban project with "original estimate"?
This question is not about
- does it make sense ...
- use a userdefined field instead ...
- activate time tracking ...
- create a scrum project ...

The short answer to your question is: Yes, Time tracking can be used on Kanban projects just like Scrum projects.
The steps to configure it are the same on both project templates:
Navigate to project settings > Screens > add the time tracking field to your Kanban issues. You will be able to set estimations with the Original Estimate field to your issues, reflecting its progress in the time tracking report of the Kanban board:
I believe this feature always worked properly with Kanban projects. That been said, can you please give us more details on how do you expect it to work so we can confirm we are on the same page here? Is there any feature in Kanban that you have identified any issues with Time Tracking?

I understand that you are interested in using Kanban boards with estimates. The short answer to your question is, No: It is not currently possible to do this within a Kanban board. There is an existing feature request where we are tracking this request over in JSWSERVER-7265
That issue was last updated in September 2018, at that time it was noted that this feature is not planned to be worked on in the short term, but was still a candidate for a long term roadmap.
Sorry this probably is not the answer you were looking for, but I would recommend watching that issue. Should this feature come to Jira Software in a future release, I would expect that issue to be updated to reflect this change and to indicate which version might gain this feature if ever implemented.
