Hi there,
We are setting up our organisation on JIRA.
It is a bit overwhelming there is a lot.
We are in the software development industry.
We do product development and once off projects.
We also want to manage the different tasks by customer (internal and external).
We are not sure how to set up JIRA to our best advantage.
Any advance would be highly appreciated.

Jira works best when it is setup to support your internal processes and teams, not the other way around.
Apart from tons of product documentation, Atlassian also has some great guides on processes and ways of working. As a development organisation, you could definitely find a lot of value in this Agile Coach guide, where practices and tools meet each other.
I can also warmly recommend getting in touch with a Solutions partner if you feel the journey is overwhelming, as @John Funk rightfully said. It is very comforting to have a sparring partner by your side that can help you avoid some (or many) mistakes others have made before you ;-)
And, it goes without saying that you have come to the right place here in community. This is a very responsive and welcoming place where many people are happy and willing to answer your questions, point you in the right direction and make your journey much more than just a tool implementation!

@Kevin Cousins I have just seen in another discussion a 'How to get started with Jira' webinar hosted by a 'Senior Atlassian Consultant' tomorrow, which might be useful to you.
We do product development and once off projects.
For your product development work, you'll want to use a Jira Company managed project template so that you can modify your workflow and allow it to grow and scale with you. A single project will be plenty to start with. You can adapt as you grow.
For your one off projects, use a team managed template. It requires little customization, is easy and fast to setup. Create one per customer to easily differentiate between the work for each customer. This will allow you to search all Jira issues and see which customer they belong to, or filter to visualize and create dashboards for each customers.
