Is it possible to create a slack channel using automation?
Im setting up a customer onboarding kanban board, and as part of this we create an internal slack channel. ideally id like to automate this when the ticket reaches a certain point.

Yes—but natively creating a Slack channel with Jira automation is only built in for Jira Service Management incidents, while Jira Software/Kanban use cases require calling Slack’s API via the Send web request action or posting to an existing channel via the Slack action after connecting the Slack app
For customer onboarding on a Kanban board, use a rule that triggers on your status change and calls Slack’s API through Send web request with a hidden token, optionally followed by a second request to seed the channel with an initial message

@Matteo Vecchiato is correct, if you Slack tenant has API open, and of corse you need to have a slack account and the correct permissions on your slack tenant,

I am not aware of any capability to create a channel using automation - just to send a message to an existing channel.
