Can you set up a custom shortcut key for "Watchers"?

I was wondering if there was I way to set a shortcut key to pull up a list of watchers (to add) to a ticket from the task board.

You can press "." and start typing "watchers". A direct shortcut to watchers doesn't exist. See https://confluence.atlassian.com/display/GH/Using+Keyboard+Shortcuts#UsingKeyboardShortcuts-IssueActionsandNavigatorShortcuts for details.
