I have an automation where a isssue (Test2) is created a subtask called Legal gets created but i want to code the subtask summary to Legal - Test2)
I did try {{issue.parent.epic.summary}} - Legal Review
but when the rule runs it only shows - Legal Review?

Okay - it must be setting that prior to recording the parent. The triggerIssue is actually what I use the most myself.
And if you want the parent ID, just use {{triggerIssue.key}}

There is some essential information missing in your screenshot to be 100% sure about how you set up your automation rule, but try this instead to refer to the summary:
{{triggerIssue.summary}} - Legal review
That syntax should inherit the summary from the issue that triggered your automation rule.

You can just use {{issue.summary}}, because the current context is your trigger issue (current issue).
