Are these issues in a Team Managed project or a Company Managed project?
Can you show a screen image of the issue showing the Start date field is present for that issue?

In the screen where you are selecting which field to set, if you search for "Start date" do you get more than one Start Date field listed in the possible matching fields?

The error message indicates that the Automation is not able to zero in on the field that needs to be updated because there are multiple fields (across the entire Jira system) named "Start date".
I recommend that you modify the name of the custom field within your Team Managed project to make it unique. Perhaps add the Project Key as a prefix or suffix for the field. Then update the rule to select the field based on its new name.
