1. Create a Automation process
2. Modify the workflow and set a Post Functions into transition affected

are you familiar with the automation functionality in the Jira cloud?
You should be able to create the rule for this, something like:
When issue is transitioned from To Do to In Progress, set the start date to now (or some other value, I'm not sure, which one you need).

You can try setting automation rules as was suggested before. Automation Rule Library may be useful to look through.

As an alternative you can use Status Time Free Jira app which displays status entry dates on each issue detail. In your case it displays "In Progress" entry date as well.
