I want to manipulate the information that shows when looking at the issues in Epic field while on the epic ticket screen. If that is possible how do I do so and will I be able to add custom fields or only system generated fields?

Currently it's not possible in out-of the box in JIRA. it might require some JavaScript hacks which isn't much desirable with JIRA. Please see the following tickets -
