Am I going insane or not? I am trying to create new custom fields that are text field multi-line and that option no longer exists or I did something to hide it. I know it was there before because I have custom fields I created previously with that type but now I can only choose test field single line or a paragraph with rich text. I don't need rich text. How can I get this back or is it gone forever?

You are not going insane. They just renamed the custom field type. If you select it, in the Custom Fields list it still shows as "Text field (multi-line)".
What did they rename it to because I am not seeing it where it should be and I don't see any other option that sounds like it would be the text field multi-line option. The only thing close is paragraph but I don't want rich text. Can I choose the paragraph field without the rich text?

Honestly I don't recall if there was both a custom field type for "Paragraph (supports rich text)" and another for "Text field (multi-line)" previously.
What I have discovered is that if I select "Paragraph (supports rich text)" as the field type, then in the list of custom fields it shows the field type as "Text field (multi-line)". So I assumed that the original custom field type was renamed as "Paragraph (supports rich text)".
Looking at custom fields I created months and weeks ago that show their type as "Text field (multi-line)" I see that they currently support rich text. Maybe they always did, or maybe Atlassian has changed from having two types of multi-line fields (one that didn't support rich text and one that did) to having only one type of multi-line field.

They definitely did not always support rich text but if it changed, then I just have to deal with it.
