Good Day,
I am new to JIRA software, just want to ask if possible that a user can add an approval and set the number of approvers in an issue/ticket?
For example, I created two task issues and they are using the same workflow.
1st ticket, I added 'Accounting Approval' and set 3 approvers.
2nd issue, I added 'Legal Approval' and set 2 approvers.
Is it possible to have dynamic approval in Jira software?

You can set your approval settings within the workflow and only for JSM. You can select if all approvers needs to approve an issue, or you may select how many approvers need to approve the ticket, in order to proceed to the next step.
A prerequisite for the approval to take place and for you to set it up, is to activate the workflow. You can read more here: https://support.atlassian.com/jira-service-management-cloud/docs/add-an-approval-to-a-workflow/

Tried following the instructions in the link but it seems that Add Approval feature is not available in JIRA Software :(

Correct. As I told you in the previous comment, approvals can be found only on JSM (Jira Service Management) and not on Jira software.
